Awesome! Today I made an amazingly tasty fresh fruit tart with shortbread crust, vanilla bean pastry cream and fresh kiwi, raspberries and blueberries.

What is not so awesome however is the crap quality of this picture (and all the others that were taken). They came out really over-saturated and super grainy. booo!! I tried to fix them in photoshop, this is the best I could do :(

I DON'T UNDERSTAND THIS CAMERA AT ALL.

Wow, that is a beautiful Flan, I would say all it is missing is the morior glaze and it would be perfect.

yeah, I used apricot jelly instead for the glaze. It's not as thick as the usual glaze but I'm not sure how to make a mirror glaze :)

Yeah, Apricot jam/jelly is a good substitute, if you are looking to make Mirior Glaze this is what we use in our restaurant:

1½ tsps unflavored gelatin
1 fl. oz. purified cold water
6 fl. oz. boiling water
1/3 cup superfine sugar
pinch of salt
2 fl. oz. strained fresh lemon juice

Soften gelatin in cold water. Add boiling water and stir until gelatin is dissolved. Add sugar & salt; stir until dissolved. Blend in citrus juice. Set bowl in larger vessel filled with ice and let stand until mixture is syrupy and begins to thicken, stirring occasionally, about 30 minutes – do not let set. Brush paper-thin layer of mixture over top of cake or tart. Refrigerate until set. Pour second layer over; total thickness should not exceed 3/16 inch. Refrigerate until mirror is set to preferred consistency.

To re-use just microwave until warm and runny again.

It lasts months in the fridge, which is helpful for any extra.

It still looks awesome, it doesn't look grainy or over saturated. If anything I wish it was bigger, I love bit photos and dramatic close ups xD
